Résumé: Immunity encompasses the biological mechanisms that enable living organisms to recognize, &#xD;
resist, and eliminate foreign substances, particularly infectious agents, while maintaining tissue &#xD;
integrity and physiological homeostasis. The coordinated network of organs, tissues, cells, and &#xD;
soluble mediators involved in these protective processes constitutes the immune system. &#xD;
Together, these components generate highly regulated responses that protect the host against &#xD;
pathogens and other potentially harmful challenges. &#xD;
Immunology is the branch of biomedical science devoted to the study of the immune system, &#xD;
its components, and its functions. The origins of modern immunology are commonly traced to &#xD;
Edward Jenner, whose pioneering work on vaccination against smallpox in 1796 laid the &#xD;
foundation for one of the most significant advances in medical history. Since then, immunology &#xD;
has evolved into a multidisciplinary field that integrates molecular biology, genetics, &#xD;
microbiology, biotechnology, and clinical medicine. &#xD;
Although initially focused on host defense against infectious diseases, immunology now plays &#xD;
a central role in understanding a wide range of physiological and pathological processes. &#xD;
Advances in immunological research have revealed the involvement of the immune system in &#xD;
allergy, autoimmunity, chronic inflammation, transplantation, cancer, metabolic disorders, and &#xD;
tissue repair. Consequently, immunology has become an essential discipline for both &#xD;
fundamental biological research and modern healthcare. &#xD;
The immune system represents a remarkably sophisticated and dynamic network that has &#xD;
evolved to provide efficient protection while maintaining self-tolerance. Understanding its &#xD;
cellular and molecular mechanisms is essential for deciphering the pathogenesis of numerous &#xD;
human diseases and for developing innovative diagnostic, preventive, and therapeutic &#xD;
strategies. This course provides an in-depth study of the cellular and molecular mechanisms &#xD;
governing immune responses. Particular emphasis is placed on the development, activation, &#xD;
regulation, and functional specialization of immune cells, as well as on their applications in &#xD;
biotechnology and health sciences. &#xD;
By the end of this course, students will possess a comprehensive understanding of immune &#xD;
system organization and function, enabling them to apply immunological concepts to research, &#xD;
biotechnology, and biomedical innovation.</summary>

Résumé: Food is, above all, a human concern. Every day, millions of people place their trust in the foods &#xD;
they consume, without being able to verify for  themselves their safety, composition, or &#xD;
production conditions. This trust, however, is not accidental; it relies entirely on the work of &#xD;
those who shape the food chain: agronomists, technologists, engineers, inspectors, and other &#xD;
professionals such as yourselves. It is precisely this challenge that this course handbook seeks &#xD;
to address. &#xD;
Food safety is not an administrative constraint imposed on industry. It is a scientific discipline &#xD;
in constant evolution, built upon advances in scientific knowledge and the growing demands of &#xD;
consumers. From collective foodborne outbreaks to major health scandals, recent history has &#xD;
repeatedly demonstrated how failures in this field can have serious consequences for public &#xD;
health, national economies, and consumer confidence. Understanding the mechanisms that &#xD;
govern food quality and safety is therefore not merely an academic exercise; it is a professional &#xD;
responsibility. &#xD;
The content of this hand book is organized into two major sections. The first, devoted to the &#xD;
concept of quality, encourages students to develop a critical and methodical perspective in &#xD;
order to answer essential questions: What is food quality? How can it be defined, measured, &#xD;
and guaranteed? What are the institutional, nutritional, microbiological, and technological &#xD;
dimensions that constitute it, and how do they interact? The second section introduces the &#xD;
fundamental principles and management systems of food quality and safety, ranging from &#xD;
Good Hygiene Practices (GHP) and the HACCP system to the international standards ISO &#xD;
9001 and ISO 22000.</summary>

Biotechnologie de l’Université de Sétif 1 depuis le 03 septembre 2023, j’ai assuré un ensemble&#xD;
varié d’enseignements couvrant plusieurs modules. J’ai ainsi été chargée de cours magistraux, de&#xD;
travaux dirigés (TD) et de travaux pratiques (TP) dans les matières suivantes : Techniques de&#xD;
culture, Analyses cellulaires et applications en santé, Ingénierie des protéines, Sciences de la vie&#xD;
et impacts socio-économiques, Biologie végétale et Enzymologie.&#xD;
Dans le cadre de la préparation de mon habilitation universitaire en vue de l’accès au grade de&#xD;
Maître de Conférences A, j’ai choisi de présenter un polycopié portant sur le module&#xD;
« Techniques de culture, d’analyses de cellules et applications en santé ».&#xD;
Ce module constitue une unité fondamentale du programme de première année Master&#xD;
« Biotechnologie et Santé » à la Faculté des Sciences de la Nature et de la Vie, Département de&#xD;
Biotechnologie, Université de Sétif 1. Il représente également un prérequis essentiel pour les&#xD;
enseignements de deuxième année Master recherche, ainsi que pour la réalisation des travaux de&#xD;
mémoire de fin d’études et, à plus long terme, des travaux doctoraux. En effet, la maîtrise des&#xD;
techniques de culture cellulaire permet à l’étudiant de développer des compétences indispensables&#xD;
pour la conduite de projets de recherche expérimentale.</summary>
